In Europe, amaranth, this edible plant, is sometimes considered a weed ! In Asia, its leaves are used in soups or casseroles like spinach. Its young shoots are delicious in salads. Gluten-free amaranth seeds are highly valued for their iron and calcium content. They are used like quinoa in the kitchen.
Originally from South America, amaranth is a plant whose oval leaves evoke that of betel. There are about sixty species, annual or perennial, spread around the world. Most are edible.
