Casarecce pasta with piccadilly tomatoes, basil, toasted pine nuts and sweet paprika

Hi everyone. Today I enjoy making this simple dish of pasta that can be serve cold or hot . Very tasty and full of flavour, and is ready in just a few minutes.

Ingridients

  • 300g of casarecce pasta
  • 12 piccadilly tomatoes
  • Fresh basil q.b.
  • 20g pine nuts
  • Salt q.b
  • Extra virgin olive oil q.b.

Procedures

First thing put the water for the pasta on with a bit of salt.

Then wash your tomatoes and diced them up. Dice as well your basil and mix them together with a bit of extra virgin olive oil, salt and sweet paprika, and leave it on the side.

In a pan toast your pine nuts and keep them on the side.

When the pasta is cooked al dente, mix it with the tomatoes and basil. Add maybe a bit more of extra virgin olive oil and cook the paste 2/3 minutes more.

Dish the pasta up, sprinkle on top a bit of pine nuts and enjoy this lovely dish…
