During the summer, we can’t get enough of simple, refreshing salads that put fresh fruit at the forefront. Two of our favorites? The classic caprese, and our watermelon feta salad. We loved these two summer sides so much, we decided to combine them into one refreshing recipe. This watermelon caprese combines slices of juicy, sweet watermelon, mozzarella, fresh basil, and a drizzle of olive oil and balsamic glaze to top it all off. The result is a simple, sweet-salty snack ready in 15 minutes (and isn’t that what summer is all about?).
Just like in the classic caprese, the ingredients are minimal here, so you want to make sure you're really going for quality. We went for the classic caprese presentation here, but if you prefer more of a mixed salad, our watermelon strawberry caprese would be a great choice.

Ingredients
- 1
small watermelon, sliced
- 1
mozzarella ball, sliced
- 2 tbsp.
sliced fresh basil
Flaky sea salt
Freshly ground black pepper
extra-virgin olive oil
balsamic glaze
Directions
- Step 1Slice watermelon into 1/2” thick squares, about 3”-x- 3”. Slice mozzarella into 1/2” slices.
- Step 2On a serving dish, alternate slices of mozzarella and watermelon. Sprinkle with basil, flaky sea salt and pepper.
- Step 3Drizzle with olive oil and balsamic glaze and serve.
