List of Ingredients
- 16 red shrimp
- 3 firm peaches
- lemon balm (or mint)
- thyme
- lemon
- extra-virgin olive oil
- salt
- pepper
Method

Place two overlapping sheets of plastic wrap on a work surface. Peel the shrimp. Slice along the back of the shrimp to devein and open them like a book. Place opened shrimp on top of the plastic wrap and cover with another two sheets. Flatten very gently with a meat tenderizer and carefully remove plastic wrap.

Wash the peaches and cut into thin slices without peeling them.

Arrange 4 shrimp on each plate, complete with peach slices and a few lemon slices. Season with oil, salt and pepper and garnish with some fresh thyme and lemon balm.
